Baked Shrimp in Tomato Sauce with Feta Cheese

This recipe is surprisingly easy and extremely delicious. Don’t skimp on the Feta!

This is for 2 servings so if more is desired, simply double up them ingredients.

  • 2 Tbs Butter

  • 1/4 Cup Onion diced

  • 2 Cloves Garlid diced

  • 1 14.5 oz Can Diced Tomatoes

  • 1 Tsp Salt

  • 1/8 Tsp Pepper

  • 1/2 Tsp Ground Cumin

  • 1/4 Tsp Garlic Powder

  • 1/2 Tsp Crushed Red Pepper Flakes

  • 1/2 Tbs Honey

  • 1/2 Lb Shrimps peeled

  • 4 oz Feta Cheese

  • 1/4 Tsp Dried Oregano

  • 1/4 Tsp Italian Seasonings

  1. In a mediumish skillet melt the Butter over medium-low heat before tossing in the Onions and the Garlic Powder and get them nice and soft.

  2. When the Onions look good, it’s time to add the Tomatoes with their juices, the Salt, Pepper, Cumin, Red Pepper Flakes, and the sweet sweet Honey and bring it all to a boil. Now stir it all together. Once it’s bubbling, reduce the heat a little bit and cook until the sauce is good and thickened. This could take anywhere from 10 minutes to 15. In the meantime, preheat the oven to 400°. Also, stir the whole skillet with regularity.

  3. After the skillet sauce has thickened you can take it off the heat completely. It’s now time for the Shrimps; arrange ‘em all atop the Tomato mixture in a nice little layer. Then on top of the Shrimps, crumble the Feta over everything. Lastly, sprinkle the Oregano and Italian Seasonings on top of all of that.

  4. The oven should be hot now so it’s time to throw the skillet in and bake for around 15 minutes. At least until the Shrimps are done.

  5. Now for the hardest part: you have to let the whole dish stand for about 5 minutes before you dig in. But then yes, dig in.
