Pasta Puttanesca

This is an easy and delicious pasta recipe that will make you feel proud for making your own homemade sauce instead of buying a jar or heaven forbid a can of the stuff from the store. It’s a little spicy and delicious and infinitely adaptable as well.

  • Cooked Pasta Noodles

  • Italian Sausage

  • 1 2 oz Tin Flat Anchovy Fillets in Olive Oil drained

  • 1/2 Yellow Onion diced

  • 10 Cloves Garlic diced

  • 3 Tbs Capers drained

  • 1 28 oz Can Crushed Tomatoes

  • 1/2 Cup Dry White Wine

  • 1/4 Cup Italian Parsley chopped

  • 1/4 Cup Basil chopped

  • 1 Tbs Red Pepper Flakes

  • 1 Tsp Oregano

  • Shakes Italian or Mediterranean Seasoning

  • Olive Oil and/or Butter

  • Salt

  • Parmesan Cheese shredded

  1. First step is to cook that Italian Sausage! You can use ground sausage and cook it like you would breakfast sausage or you can use a grilled Italian Sausage link or you can cook it on the skillet, it doesn’t matter. Just get you some Sausage. Once done, set it aside.

  2. Wether you used a skillet or not to cook the Sausage you’ll need one now, so put some Oil or Butter in that sucker and sauté them Onions until they’re about done.

  3. When the Onions are almost done, toss in the Garlic, Anchovies, Oregano, Red Pepper Flakes, and the Italian Seasoning and sauté for around 2 minutes or until them Anchovies have dissolved away.

  4. Now add to the skillet the Capers, Can of Tomatoes, White Wine, and Parsley and bring the whole concoction to a boil. Once boiling, reduce the heat and let it simmer for around 20 minutes.

  5. When time’s up, add the Basil, the cooked sausage, some Salt, and any other seasonings you’d like and cook for another 5 minutes or so.

  6. When the sauce is completely done, pour it over some cooked pasta of your choice and top it with some Parmesan and buen provecho!
